Are Carbs Really Bad For Me, And Why?

Yes, carbohydrates really are bad for you. They are also not only good for you, but essential to your daily health.

Paradox? No, because what most people fail to appreciate about carbohydrates is that they really come in two forms. There are the complex carbohydrates, which are the variety found in the "leafy" vegetables, and there are the simple carbohydrates, that are found in most of the convenience foods that we enjoy so much today. It is the latter type of carbohydrates, the simple kind, that are so bad for us. Not because they are chemically very distinct from the complex kind, but because they are rapidly digested by the body and are far more easily converted into fat than the complex carbohydrate. In fact, we could graze on complex carbohydrates (eat them almost nonstop, like cows do) and we would probably end up losing weight because we had displaced the simple carbs from our diet.

The only real difference between the two carbohydrate forms is that the complex variety is essentially very long strings of the simple variety. Your body cannot digest complex carbohydrates immediately. It first has to break them down into very short strings before significant absorption into the wall of the gut can take place. Meanwhile the food is making its way out of your system. On the other hand, simple carbohydrates have already been broken down into short "strings of sugar" before entering the body. Therefore it only takes a few minutes for simple carbs to be absorbed into the bloodstream.

So when you chow down on the last two iced-donuts left in the tea room after morning break you are flooding your body with simple sugars. This is the "rise in blood sugar" that always has diabetics so concerned. When blood sugar rises too much, the body secretes insulin to mop up the excess and convert it into fat for use at a later date. This is why eating sugary food quickly leads to weight gain, especially around the midsection if you are a man, and the hips, thighs, and butt if you are a woman.

Sugar is added in abundance to all of the "sweet tooth" items you can think of: cookies, cakes, candy, donuts, bagels (and any other "bready" snack). But it does not stop there. Today there is a growing obsession with low fat foods, and the problem with removing fat from foods that naturally contain it is that they lose a good part of their taste.

So the makers of low fat yoghurt and milk are left with two alternatives: (1) lose customers who decide they no longer enjoy the low fat versions of their favorite foods, or (2) add sugar and other taste enhancers to offset the loss of taste. Well, you can guess which option appeals most to the food marketers. They up the calorie count of their products to offset the fat loss. So their supposed "healthy low fat" products are not nearly so healthy as they would have you believe.

So beware. When you are looking at the food labels, forget about the number of grams of fat. It is the total number of calories that should concern you. Fat is not bad for you, provided that it is not the man-made hydrogenated variety, like trans fats. Fat just happens to be very dense in calories, so you cannot add too much of it to your meals before you are overloading yourself on calories. Eat fat in moderation for taste, and do not obsess over it.

Add more complex carbohydrates to your meals whenever you can. Your body will extract much fewer calories from the food than the equivalent mass of simple carbs. Also, add a decent portion of protein to your meals. Every meal. Protein, like complex carbs, is relatively difficult for your body to break down, and will slow the absorption of calories. Try to limit the quantity of simple carbs you add to your plate. Also beware of the fact that some of the non-leafy, root-like, vegetables, like potato behave much more like simple carbohydrates, than the complex form. If you want to limit your fat gain, limit your allocation of potato and rice, two of the staple vegetables that are added to our plates today.

Just How Bad Is Our Modern Diet?

Our modern day diet is actually frightening when you take the time to look into it, which is probably why most people choose not to do so. After all, we have to eat, and with the kind of high stress lives we live today, where we fight to earn every dollar, who exactly has the time to investigate their food in any detail?

For the average consumer, knowing whether or not a given food item is healthy or not is not only a confusing endeavor, it is time wise costly. Have you studied food labels lately? They are not exactly easy to decipher. If you have to stop and analyze each new food item you come across in your local store you are going to be moving through the aisles very, very slowly. Most people simply do not have the time, even if they knew what it was they were looking for in the food labeling.

Most food companies are betting on the fact that their customers do NOT have the time for a proper analysis of the labels, and that they will only make a cursor scan of the total number of calories, and the number of grams of fat, and perhaps sodium content.

These are all important numbers, but they do not tell the entire story. On low fat items the number of calories tends to be harder to find than the number of grams of fat. Why? Because consumers who discover that the product is indeed low in fat grams are less likely to pay attention to the total number of calories, which is the really important number when in comes to weight loss. It does not matter if the product is low in fat if it also happens to be loaded with sugar. It is the number of calories that is going to determine whether or not you gain weight, not the total fat content.

So foods that appear to be healthy may not be healthy at all. You will find cereals advertised as being good for your heart when in fact their high sugar content means that exactly the opposite is true. The Nobel prize winning chemist Linus Pauling believed that fructose, the naturally occurring sugar found in fruits, was the real culprit behind the rise in coronary disease in the twentieth century. Fructose is found in equal parts with glucose in table sugar, and is added to just about every food that has been sweetened for taste.

Pauling believed that fructose is broken down into acetate (think nail polish) which is a precursor to the creation of cholesterol which is synthesized in the liver. This was not Pauling's idea, but actually the conclusion of work of other chemists. But does anyone warn you today about eating too much sugar when it comes to the discussion of coronary disease? No, we get a lot of advice about avoiding eating eats and meat which are high in cholesterol. But ingested cholesterol does not go directly into the bloodstream, whereas sugar floods in every time we down another sticky bun.

This is just one example of the difficulty the consumer has in figuring out what is healthy and what is not. Pauling's ideas about fructose and cholesterol were certainly not shared by all nutritionists. Most doctor's today would not even know that there is a connection between fructose and cholesterol. So if physicians themselves are misinformed on important matters like the cholesterol/fructose connection, consumers are certainly not to be blamed for making the wrong choices when it comes to their food.

Yes, I'm A Little Fat - So What's The Problem?

I like to think of myself as a little fat too. There is nothing wrong with being a little fat. The trouble is, I am lying to myself. I know this because when I go to grab my paunch I can easily fill two hands with fat. That's a problem, because until recently I had no idea about how to get rid of it. But recently I have been reading Carolyn Hansen's book "21 Days To Healthy Eating":

Now I know what I should be doing to get rid of the fat around my midsection, and on other parts of my body too. I suspect that this is probably true of most people, but I have been going about fat loss entirely the wrong way for a very long time. I have been lazy and allowed myself to get into some habits that have been working against my goal of losing the excess weight that has crept onto my frame over the years.

I see it every time I turn sideways at a mirror. It bumps up against the edge of my desk when I pull my chair in close as I sit down. It's got to go.

Fortunately I now have a plan. But rather than fill you in on what I will be doing now to get into better shape, I am going to tell you what I have been doing wrong. My guess is that a lot of people reading this article will be doing the SAME wrong things, and will slowly nod their head as they recognize the patterns.

The first thing I did wrong was assume that "a little fat" never hurt anyone, so I could ignore the slow changes I could see in my body. Big mistake. It is so much easier to never put on the weight in the first place than to run around looking for ways to get rid of it when you discover that you need to look fit and trim for an important event. Ever felt the urge to respond to those ads that promise to help you "Drop 10 pounds in 10 days"? Lots of people do. Unfortunately, lots of people also discover that there is no way to drop weight fast and keep it off. When you restrict your calorie intake too severely your body is forced to render both fat and muscle tissue for energy. So the weight you lose is not all fat weight.

Why does that matter? For one thing, muscle is the tissue in your body that most likes to gobble up fat. The more muscle you carry, the higher the number of calories you need to burn through over the course of the day. If that energy does not come directly from the food you have digested that day, then it must come from your existing fat reserves.

So you want to hold onto every ounce of lean muscle tissue that you can. Calorie restriction, which is what most diets are about, only hastens the loss of muscle tissue. So you do not want to go down that road. Diets are out.

The second thing I did wrong was to go on the "one day diet" every day. This is just another way of saying that I would eat just one large meal each day and top it off with a few snacks in the hours that followed. Well, this is just like dieting, only the duration of the diet is less than 24 hours. It also does not work too well, because like regular dieting the message your body gets is that food is scarce. This triggers a response to food by the body that can only be described as ravenous.

Instead of flush any excess of food that has made its way into the body as blood sugar, insulin is secreted in volume to mop up the sugar and store it as fat, usually in the abdominal area of the body. This ensures that some form of energy is available to be drawn upon if this "one day famine" should stretch out to more demanding time durations, like a week or a month. The body primes itself for fat accumulation when you treat it this way, by withholding food for the better part of the day.

So don't make the same mistake. The solution to this is actually pretty straightforward. You eat more often, but you make the meal sizes smaller, so that you never experience any real hunger pangs. This is the "grazing" method that is advocated by fitness people like Carolyn Hansen. I've Heard I Should "Eat Clean" - What Does That Mean?

Clean eating is all about reducing the footprint of man-made substances in your diet. The reasons you would want to do this are many, but the most important one, from a purely selfish point of view, is that you want to improve your own health by doing so. You may be wondering whether there is a difference between eating clean and eating organic. Well, eating organic foods is a subset of eating clean foods. You will not always be in the position to choose between eating an organically-grown piece of fruit (free of all pesticides) and one that may have come in contact with chemical substances during the period in which it was grown. Organic foods are always to be preferred, but a properly treated (washed and possibly peeled) fruit or vegetable that has been exposed to chemicals is going to be a lot more nutritious eaten raw or lightly cooked than the same food after it has gone through a processing line.

As an example, take a jar of peaches floating in syrup. Those are probably not organically grown peaches in that jar. But they are peeled, and you would be a lot better off eating the peeled fruit just after it has been taken from the tree, than to eat those processed and jarred peaches. That sugary syrup they float in is full of preservatives and is obviously high in sugar content - perfect for adding a large number of calories to your meal. You know what happens when you eat an excess of sugar, right? It is converted into fat.

Actually sugar does a lot more harm in the long run than to simply make you fat. But the point we are trying to make here is that it is the "processed" nature of foods that we are trying to avoid when eating clean. We are also trying to avoid added chemicals in whatever form they might come in. So there are "degrees" of cleanliness when it comes to choosing our clean foods. Pure organically grown foods that are never processed for distribution, or packaged, before they are eaten, are probably the cleanest foods.

You can find the clean foods on the inside walls of your supermarket. This is where you find produce and meats that have a limited shelf life. Whenever you can manage it, avoid using the inner aisles of the store. This is where you will find aisle after aisle of processed foods that have a very long shelf life because they have had the "living components" extinguished before being packaged. Usually this means all the valuable enzymatic components of the food have been destroyed, components that carry much of the nutrition that could have benefited your body, but now have been removed.

A little appreciated fact about processed foods is that the chemicals they carry slowly poison your body, and that in response to this the body tries to seal off the "pollutants" by wrapping them in protective fat. The body tries to insulate the critical organs from the effects of these chemicals. The end result, though, is pounds and pounds of extra fat over time. Not only that, but the more of this "polluted fat" you carry, the harder it is to shed it because to do so would involve flooding your body with the toxins that have been stored away for protection.

So before you can lose a lot of your fat reserves, particularly if you make a habit of eating processed foods, you will need to detoxify your body by eating clean for a length of time. Eating 3 Meals A Day? Then You Are Not Eating Often Enough!

I used to think I was being smart by forcing myself to eating just one main meal every day. It played into my desire to be as efficient as possible when it came to doing those things that were not directly responsible for moving me toward the goals I had set for myself. I might have been efficient at using my time, but as far as my eating habits go I was about as inefficient as I could possibly be at maintaining my health and avoiding the middle-age spread that inevitably catches up with all of us who fail to allocate time to understanding what is going on with our body.

It turns out that when you eat fewer meals over the course of the day, you are signalling to your body that food is a scarce commodity. In response, your body "hunkers down" and prepares for the worst: an ongoing period where food will be in short supply. It lowers its metabolism, and instead of using every scrap of energy you provide it to power your bodily processes, it siphons off as much as it can to stash away for the coming days when it will need to draw upon those energy reserves. So builds a much fat as it can, usually around your midsection.

Oops. My once-a-day meal plan has actually been causing me to gain weight, rather than lose it. No wonder I always feel drained by the time evening comes around. My depressed metabolism is responsible for that! Fortunately, I now know the correct course of action to take. I need to eat more often. Not just 3 times a day like I used to do, but 5 or even 6 times a day. I know it sounds wrong, but according to experts like Carolyn Hansen, the more often you eat, the better.

The reasoning isn't that hard to follow, given what I have already said about how depriving yourself of food causes your body's metabolism to slow down. You can go entirely in the opposite direction by eating more often, but making your meal size correspondingly smaller, so that you take in no more calories every day than you would have if you were eating 3 times a day, or even just once.

The important thing is that the meals are spread out so that your body gets the message you want it to hear: "Hey, there's plenty of food around. Look, so much of it in fact that I can find something to eat every few hours. No need to store belly fat. No rainy days on the horizon right now. Let's stay trim and ready to pounce on the next food hunting expedition."

I've alluded to the kind of evolutionary programming that has been wired into us over countless generations. Long ago when we actually DID have to hunt for food, and when the winter months saw long spells of enforced food rationing, getting fat when food supplies started to dwindle really did increase the chances of survival until the spring months. But these days we have food year round. Not only that, but we have made a habit of "denaturing" our food. We process the nutrition out of it, dip it in sweet syrup, trans fats, and other equally unhealthy concoctions, and supersize it for good measure.

In other words, we put ourselves on the fast track for weight gain every day that we ignore the principles of health eating that are spelled out in Carolyn Hansen's book "21 Days To Healthy Eating":

Killing me softly with... food

Today I want to reveal to you one of my most cherished goals. Don't laugh, but I want to live to be at least 120 years of age.

Impossible? Maybe not. But if I really want to get there I am going to have to be smart about it, and one of the things I am going to have to do is radically improve the quality of the food I eat. Until today I had only a vague notion of a plan, but recently I got hold of Carolyn Hansen's book "21 Days To Healthy Eating":

Right at the very beginning of the book she points out that every one of us is really at war with the companies that provide us with food. The problem is that most of us don't even realize we are at war, and because of it we are definitely losing the battle.

But don't feel too bad if you didn't have the faintest notion that you are being assaulted every day by the massive juggernaut that is the food industry. They know that it works to their advantage to be subtle in their strategic maneuvering for your food dollars. In fact they are extremely good at packaging what appears to be healthy food and putting it right in front of you with assurances of "wholesomeness" that leave you feeling good about your food selections.

But the fact is, nothing has really changed in last 50 years when it comes to peddling popular food choices. Only the misleading messages, and the poor nutritional content of the offering, are harder to detect now. Looking back at earlier periods, when the messages of advertisers received a lot less scrutiny than they do today, the blatant use of misinformation was hard to miss (though few consumers would have picked up on it at the time). Take this message, for example, advertising a soft drink that is still immensely popular today:

"For A Better Start In Life, Start COLA Earlier.

How soon is too soon? Not soon enough. Laboratory
  tests over the last few years have proven that babies
  who start drinking soda during that early formative
  period have a much higher chance of gaining acceptance
  and 'fitting in' during those awkward preteen and teen
  years. So do yourself a favor. Do your child a favor.
  Start them on a strict regimen of sodas and other
  sugary carbonated beverages right now, for a lifetime
  of guaranteed happiness."

Hmm. Do they really mean a lifetime of guaranteed happiness, or could they have actually meant a lifetime plagued with obesity, diabetes, and all the other chronic health conditions that affect children today?

Imagine if that advertisement was run today. There would be an outpouring of public condemnation. So advertisers need to be a lot more sneaky today when it comes to their campaigns. They know better than to put blatant lies in your face. Their messages have changed to accommodate the times, and the public's vague awareness that high-fat, high-sugar, and high-salt content in a food has health consequences down the road.

But the products that the food companies churn out have not changed appreciably since the time of the ad above. Soft drinks still carry a ton of sugar and calories in them, as do all the other convenience foods that make stopping by at a vending machine such an enjoyable event. Many foods that formerly would have been called high-fat have received a do-over and are now billed as being healthy for you because of their new low-fat content. But look more carefully at the offering and you will often see a much higher sugar content in the newer versions of these foods. The sugar has been added to offset the lost of taste.

In the end, whether it is fat or sugar that is delivering calories to you, it makes no difference. Your body will convert into fat whatever it does not need for immediate energy requirements. Your waist will expand either way.

The problem with this is that fat around the midsection is highly correlated with coronary disease, liver disease, and a host of other life threatening conditions that are going to wipe that 120 year lifespan right off the table. Heck, if you end up carrying a "spare tire" into your sixties, the chances of you making it into your seventies are not at all good, let alone your eighties.

She has some good ideas about how to implement small healthy meals that promote fat loss. The nice thing about her plan is that it does not involve dieting of any kind. Instead she shows you how to work with your biology, rather than against it, and in the end, if you are going to try to eat healthy for the long run, that is the only kind of plan that makes any sense at all.

So go ahead an tick off all the ones you have not eaten in the last 30 days. If you managed to place 6 or more ticks then you are doing great. If not, keep reading, because your prospects of losing weight over the next year are not good.

The problem with most of these foods is that they are high in simple carbohydrates which means that they are quickly broken down by your body and converted to blood sugar. The result is that the excess of blood sugar in your system is rapidly converted into fat, usually swelling the size of your waistline.

Other junk foods on the list are high in hydrogenated fats, like trans fats, which make your food tasty but do real damage to your arteries and put you in line for heart attack, stroke, and diabetes. Trans fats are responsible for perhaps 30,000 early deaths every year in the United States alone.

If you want to live longer than the average lifespan, and particularly if you are already at or past the halfway mark (which would make you around 40 years of age, or higher) it is DEFINITELY time to be pro active and educate yourself about the quality of the foods you are eating and the consequences of eating not only food that clearly falls into the category of junk foods, but all the common processed foods that line your supermarket shelves. Processed foods probably do as much damage, or more, than junk foods do, given that they tend to get a "pass" by most people and routinely end up on our dinner plates.

Well, if you think the average food item delivered from a package, whether it be from a can, a pouch, or a plastic or glass container of some type, is good for you, well... you need to think again. If a food is not recognizable as something that has been plucked off a plant, dug out of the ground, or taken as unprocessed meat from a farm animal, then odds are very high that you will not be doing your body a favor by eating it.

So how did I fare on the little test I gave you above? I failed.

But after reading Carolyn's book "21 Days To Healthy Eating" I have a lot better appreciation of the subject of healthy eating and I fully expect that in a month or two (after I have worked to eliminate most of the foods on that list) I won't ever fail the test again. What did I learn? Well, for starters, I now know that there is a lot more to eating healthy than simply adding more vegetables to my diet. But more importantly, I have a much better appreciation of what it is that I need to be looking for in my food when I visit my local supermarket. Or more accurately, I have a better idea of the food additives I need to avoid when checking the food labels. Boy, there are a lot of substances in food today that are not good for you!

Incidentally, if you find yourself looking at a food label then chances are good that the food item you are holding in your hands is not particularly nutritious. Ask yourself this, are there food labels on any of the fruits and vegetables you put into your shopping cart? No, because those foods have not been processed and had a slew of chemical ingredients added to them to improve the shelf life and the taste. Food labels were introduced after consumers began to question what exactly it was that they were eating.

For good reason too. The additives used to extend the shelf life of foods tend to do the exact opposite for your own shelf life. Our diet today is worse than at any other point in history, and yet our lifespan at around 80 years of age in most developed countries is fairly high - certainly when compared to the average lifespan of only a century earlier. Most of these gains though, are due to medical advances - like the introduction of vaccines, and medical treatments that can extend the life of the chronically ill patient by decades.

Of course, all this begs the question. How long might the average lifespan be if we simply rolled back the "advances" in food technology that have been introduced over the same period. It is more than an interesting question. The answer literally affects the life of every person in the developed world who subjects their body to the slew of processed foods that are slowly robbing them of years that might otherwise have been spent in relatively good health.

I have always been vaguely aware that my food choices are perhaps not the best ones I could be making. But it is easy to rationalize my approach to food: I don't have the time to figure out the optimal approach to food. I don't have the budget to shop at the high end food stores that advertise "healthier" food selections, and I like the taste of those peanut m&ms just TOO MUCH to try eliminating them from my night snack habit.

The trouble is, all of those rationalizations have terrible consequences down the line. It becomes apparent after reading a book like Carolyn's "21 Days To Healthy Eating" that I am saving neither time nor money by skipping on my education and implementation of healthy eating practices. Sure, I save money by purchasing the cheaper less nutritious foods. But I am substantially increasing the odds that I will be paying substantial medical expenses later in life in order to treat the ills of my bad food choices for which I will literally be suffering daily.

Then there is the matter of time saved. If I remain ignorant of what makes for a healthy food selection I can save time by simply reaching out and grabbing whatever it is that the food companies tell me I should be eating because they say it is healthy for me. Well, I might save time now, but I am going to lose it later with years shaved off my lifespan. Maybe even decades if I treat my body like a garbage can and eat whatever makes me feel good at the time.

But I am not going down that road any more. From today on out I am going to be making conscious decisions about the quality of the food I eat, and if you want to do the same so that you too can add extra years to your lifespan I strongly recommend checking out "21 Days To Healthy Eating":
